Vegetable pancakes

If you like pancakes but want to eat healthy foods. These pancakes are tasty but are much lighter food then normal ones.

1) Cabbage pancakes.
Cut cabbage as you would for making soup. Put it into salted water and boil until cabbage is soft. Drain and let it cool a bit (so that you wouldn't burn your hands).
In a bowl mix eggs, flour and salt. I usually take 2 eggs and enough flour that it it hard to stir. Than mix cabbage into resulting dough. I find it is much easier to do with my hands.
Heat the skillet and cook as you would normal pancakes.

2) Squash pancakes.
Skin squash then grate it on a grate with big holes. In a bowl mix eggs, flour, a bit of sugar and salt - 2 eggs, 5 tablespoons of flour, 1/3 teaspoon of salt and 1/3 teaspoon of sugar.
